Beef and pork offal used to be thought as useless and thrown away until the early Showa era.
Hokkyokusei, a restaurant serving Western dishes, worked out how to cook. Simmered dishes and gratins with offal, called “horumon (meaning what is to be thrown away in Osaka dialect)”, became a few of the popular items in the restaurant.
